French Cuisine Increasingly Popular In The UK

With SeaFrance Ferries Dover Calais making it so easy to reach the continent, it comes as no surprise that French cuisine is increasing in popularity in Britain, faster than any other type of international cuisine.

A study conducted by independent market research firm Kantar Worldpanel found that sales of French prepared meals rose by 16 per cent in 2010, with retailer Tesco reporting a 27% jump in sales of French prepared meals resulting in the supermarket chain called French Classics.

Tesco says that sales of prepared meals such as Coq au Vin rose by 34 per cent, and Tarte au Citrons jumped by a whopping 82 per cent during 2010.

During a period of economic hardship the apparent contradiction of families dipping into their pockets to buy more expensive French prepared meals was explained by Stephanie Bacon of Tesco who said: “Families are buying pricey prepared foods to have the in home restaurant experience, which actually saves them a lot of money by cutting out the high restaurant bills.”

“Our first contact with the effects of French cuisine increasing volume sales was when we released the Restaurant Collection in 2009. It included many French options. Watching this line surpass our expectations prompted us at gut level to start the French Classics in the Fall.”

SeaFrance Ode To Cognac

SeaFrance Ferries Dover Calais would hardly be doing France justice without a post on the beauty of Cognac, which is the King as far as brandies goes, and made in the Charente Maritime area of France and taking its name from the local town of Cognac, and  must be made according to extremely strict and precise regulations, any even slight deviation from this methodology results in the Cognac becoming just a regular brandy.

France has seven regions that have been designated as producers of Cognac, all of which blend their own unique creation, the highest quality though, unsurprisingly comes from Cognac itself.

Cognac is made with very exclusive grapes, with very specific ones that are picked for the purpose of making it. Cognac needs to be made with 90% Folle Blanche, Ugni Blanc or Colombard grapes. That 90% specification is by law, with the other 10% permitted to include different varieties of grape, which tend to be specific but eccentric.

Unlike other brandies, Cognac must be twice distilled in copper pot stills. Following the second distillation, the eau-de-vie or heart of the cognac, is then placed on oak barrels made from the wood of trees from forests in Troncais and Limousin.

It is this part that is most important, since the heart of the cognac then gets aged for no less than a couple of years, with a lot of Cognac aged for much longer than that. However it is not allowed to age indefinitely, no longer than five or six decades is advisable, it does need to be drunk after all. No matter what vintage or cost, booze sitting in a bottle is not how the world is supposed to work.
